Slam Down VI Fried Fish recipe

Here is the recipe that was used for the fried fish at the slam down potluck.

Tempura Batter-use ice cold beer of your choice instead of water.  use lagers or light ales, stouts or brown ales not ideal.

add seasoning to batter: garlic salt, pepper and dill.

Dip fish in batter, let excess run off.  Roll in Panko bread crumbs and fully coat.   

heat oil to 350 degrees and fry to golden brown.  season with garlic salt to taste right when the fish comes out of the fryer.

The colder the beer and in turn the colder you can keep the batter the lighter and crisper the end result will be.  if oil drops to below about 330 degrees or is over 375 results can vary. oil temp  too low fish comes out oily and greasy,  oil temp too high batter will cook faster than the fish,  and look done based on the appearance of the batter but not be fully cooked on the inside.

another variation of this recipe is to mixed boxed mash potato mix in with the Panko.
