Good call. Trout have high levels of omegas like salmon (oily). This makes it very good to smoke. Chop the head off and scale em', stick it in brine for 24-36 hrs, let air dry with fan under 60degrees for 2 hrs, then smoke with mesquite for 2-3 hrs. You can fit like 4; 2lb fish on the grill at once. If your intersested in recipe i can send you my brine recipe. I am gonna get some of those land-locked steelies out of whale rock and smoke them.
