Smokin MB king salmon

Tried my first attempt at smokin salmon and I was stoked on the results.  Put some steaks in brine for 2 days.  Took mesquite charcoal for a base, and mesquite chunks & chips for the smoke.  3 1/2 hrs on the grill and it is amazing what you come out with.  Just tell me me how you think it looks!!

I just bought some small pieces of smoked salmon at the store this evening.  Yours makes what I got look puny.  Looks delicious.  Let us know how it tastes.  A few years ago I caught a 3 lb. trout and
couldn't figure out how to make the best of it.  Put some in the smoker and darned if it didn't taste just like smoked salmon.  After looking at yours I'm thinking maybe I'll thaw some of those smaller trout in my freezer and smoke them.  Darn - starting to get hungry just thinking about it.

Good call. Trout have high levels of omegas like salmon (oily).  This makes it very good to smoke.  Chop the head off and scale em', stick it in brine for 24-36 hrs, let air dry with fan under 60degrees for 2 hrs, then smoke with mesquite for 2-3 hrs.  You can fit like 4; 2lb fish on the grill at once.  If your intersested in recipe i can send you my brine recipe.  I am gonna get some of those land-locked steelies out of whale rock and smoke them.  I will let you know how it turns out!
